Fish washed clean. To cut the spine. I had a big piece, I'll pickle half. Removed all the bones, skin left too much (the second half). Instead of skin fish can be wrapped towel.
RUB a mixture of salt and sugar inside and out, sprinkle with pepper. Spices for pickling trout is not needed. And yet, this fish is not to overdo (as fat) - too much salt it will not take. So don't be afraid to mess up! To put a beautiful fish in a bowl, put in the refrigerator. Say they are ready in about 3 hours, I have never so quickly have not tried, usually the next day.
