Cooking
Spinach (not the youngest, like me) drop into boiling salted water for 1-2 minutes.
Drain in a colander and rinse with cold water.
Strained spinach a good squeeze and chop coarsely.
In a pan heat the vegetable/olive oil and add coarsely chopped garlic cloves (do not fry!).
Add to garlic, spinach, salt, pepper, nutmeg, lemon juice, mix well, 1-2 minutes, let it sit all together.
In a greased refractory molds spread Protosenya with spices spinach, and top with bread crumbs and grated cheese.
To gratinate in a preheated 200-210°C oven for about 10 minutes.
Can be served as a self-starter. Or as an addition to boiled/baked potatoes. You can, for fresh bread rolls to baguettes.
