Basque cake with cherry
The recipe for this delicious pie from the book "Pies and something else." With the addition of alcohol, the dough tender and fragrant. The drawback of this cake is, and that's what I want to eat already when you start to cook it. And it must be cooled completely, otherwise it is difficult to cut and not so good work.

Ingredients

  • Flour

    350 g

  • Powdered sugar

    50 g

  • Sugar

    200 g

  • Butter

    125 g

  • Yolk egg

    6 piece

  • Chicken egg

    1 piece

  • Milk

    500 ml

  • Cherry

    200 g

  • Rum

    30 ml

Prepare the custard. Mix powdered sugar with vanilla and mix with 5 egg yolks. Add to the same 50 grams of flour and mix thoroughly. Milk heated with 50 g of sugar. As soon as the milk starts to boil — pour it into the yolks and mix well. Again, heated the milk-yolk mixture over medium heat, constantly stirring. Once the mixture thickens, remove from the heat and cooled.

Cherries (I had frozen) defrost, allow the juice to drain and remove the bones. Again give the juice to drain.

Prepare the shortbread dough. Softened butter mixed with sugar, one egg and one yolk. Add to 2 tablespoons of rum. Add to the dough the flour and quickly knead. Wrap the dough in cling film and put in the fridge for 30-40 minutes.

Divide the dough into 2 parts. A large part of the test is evenly distributed on the form, making a small bumpers. On the basis of spread the cooled custard and cherries. Cherry sprinkle a little powdered sugar.

Top pie close the remaining batter, carefully zasiyaet the edges and brush with egg. Our pie is baked for 1 hour at a temperature of about 160 degrees. In the process of photographing the cake suffered a bit, but the taste is not affected. I swear!!!
