Vegetable soup with coconut milk
A fragrant and easy soup in Oriental style in 20 minutes

Ingredients

  • Coconut milk

    600 ml

  • Assorted vegetable

    500 g

  • Ginger

  • Garlic

    2 tooth

  • Chili

    1 piece

  • Vegetable oil

    1 Tbsp

Garlic and ginger (1 cm root) peel and cut into thin plates. Pepper wash and cut into rings, removing the seeds. Reheat in a saucepan with a thick bottom butter and fry the garlic, ginger and pepper for 30 sec.

I had frozen vegetables "Oriental food" (Hortex): cabbage, peppers, bean sprouts, mung, Chinese mushrooms, leeks, green beans, onions.

Add the coconut milk in a saucepan, bring to a boil, then reduce the fire. After 7 minutes, add vegetable mixture, again bring to a boil and cook on medium heat for 10 minutes.

Season with salt, pour into bowls, sprinkle with chopped Basil leaves and cilantro.
