Shortbread tarts with lemon filling

Ingredients

  • Flour

  • Butter

    225 g

  • Sugar

  • Yolk egg

    4 piece

  • Water

    1 Tbsp

  • Chicken egg

    1 piece

  • Lemon

    1 piece

Prepare the dough: butter cut into pieces, add the flour, sugar beat with a mixer using a nozzle for the test.

From the dough form a ball, wrap in plastic wrap and refrigerate for 1 hour.

Then, divide the dough into 8 parts, roll out the layer and arrange in molds. Do a lot of punctures with a fork and refrigerate for another 30 minutes.

Make the filling: beat with a mixer the butter with the sugar. Add the egg and yolk, stir. Add flour and stir.

Lemon peel and cut into thin circles, seeds remove.

Get the moulds out of the fridge. The dough is covered with pieces of parchment, and pour on top of beans and put in a preheated 180 degree oven for 15 minutes.

Remove the parchment with beans. The oven does not turn off. Spread circles of lemon on the molds, sprinkle with sugar, and distribute on top of cream and again in the oven for 20 minutes.
