Therefore, seeing the idea of this sauce on the Internet, immediately ran to the kitchen to put it. Well, what to say? It is very tasty. Of course, such a sauce, you can treat yourself to dinner or a weekend. And they can surprise you.

By itself, the sauce is prepared quickly. But first you need to make pancakes (crepes). I have a simple favorite way is baking pancakes, which use for many years. I call it "two plus two" because all the ingredients are taken in the amount of two times. In a container pour the milk and boiling water. Add sugar, salt, eggs and whisk all minute with a mixer.
Add flour, baking powder, whisk until smooth, to avoid lumps. Pour sunflower oil "Oleyna". Once again, doing a couple revs with a mixer.
Grease the pan with oil (I do this usually before the first pancake) and bake in the usual way pancakes: from both sides until it will turn brown. At the request of greased ready pancakes with melted butter (I never do).
From this amount I get usually about 20 pancakes.
Meanwhile, make the sauce. Take dry red wine, add the brown sugar, the rind (zest) of orange, cardamom pods, cinnamon stick, cloves, ginger root (I have dry) and star anise. All, put on fire, bring to a boil and cook on a medium heat for 5 minutes.
Take frozen cherries, defrost, the juice is poured (left).
Of the wine remove the spices (you can drain), put the cherries and cook for another 5 minutes.
Cherry juice dilute the starch.
Pour starch solution in the wine with cherry, continuously stir, allow to thicken, turn off the fire and set aside.
Give the sauce to cool slightly. A "honey" sauce - a dangerous hot, can burn.
