Mirror chocolate glaze from Pierre Herme
Dear friends, I want to share with you the recipe of a chocolate mirror glaze from the "Picasso of pastry art" Pierre Herme. This recipe differs from the one available on the website, but very interesting. I should warn you, the frosting contains a lot of sweet ingredients, which can cause resentment among Chefs. Ingredients

  • Chocolate milk

    150 g

  • Honey

    150 g

  • Condensed milk

    150 ml

  • Water

    75 ml

  • Gelatin

    1 Tbsp

  • Sugar

    150 g

Cooking

Soak the gelatine in 30 ml of water for the time specified in the instructions.

In a saucepan with a thick bottom sent the remaining water, sugar and honey. Bring to the boil and cook for two minutes.

Remove from heat, add condensed milk, stir well.

Then add swollen gelatin and chocolate, mangled pieces. Stir until smooth.

Cool the glaze to room temperature, then cover the product. Glaze with a spoon, gradually pour on the cake, nothing smeared, it should drain itself. Allow to harden in the fridge.
