Cut pork meat into cubes.
In meat add egg whites and 4 tablespoons of soy sauce TM "Kikkoman". Stir and allow the meat to zamarinuetsya 15-20 minutes.
Meanwhile, slice the carrots thin strips.
Sweet pepper wash, cut into two halves, remove the seeds and also cut into strips.
Peel the garlic and cut each clove in half. In a pan pour the oil and saute the garlic 1 minute, then remove.
In a pan put sliced carrot and bell pepper, sauté the vegetables for 5 minutes on maximum heat, constantly stirring. Put the vegetables on a plate.
Pieces of meat, roll in starch and send fry in oil left after frying the vegetables. Fry the pork for 10 minutes.
After which put it on a plate with vegetables.
With eggplant, remove the skin and cut into cubes. Pour soy sauce "Kikkoman" and sprinkle with starch, and then stir.
Start frying the eggplant, and this must be done so that they become soft but not collapsed. So do not disturb them too often. 3-4 minutes from the beginning of the roast, cover the pan with a lid and let it cook gently for eggplant 3-4 minutes.
Now prepare the gravy: to do this, dissolve in 200 ml of cold water and a spoonful of tomato paste, add 2 tbsp of cornstarch, remaining soy sauce "Kikkoman", sugar and vinegar.
Pour the prepared sauce in a heatproof bowl and heat.
Put the sauce all fried vegetables and meat, stir gently, and after 1-2 minutes remove from heat.
The dish can be eaten, but if it will stand quite a bit, it will be even tastier.
