To begin with, that the classical recipe is prepared with black currants and cream is made with butter. Chip cake - cakes without flour. That's all fine, but... In the fridge were red currants, butter cream I don't eat a cake without flour turned out to be incredibly fragile, so I reinforced cake chocolate biscuits that are prepared in advance, you can use any recipe you like. Let's start with the preparation of sponge cake without flour... whisk the egg Yolks with half the sugar until a light white mass.
Proteins with the second half of the sugar whisk until stiff peaks.
Chocolate melt in a water bath or in a microwave oven.
Connect half of the protein and chocolate, mix.
Neat movement, combine the remaining egg whites with the dough.
Preheat the oven to 170*C, on the baking paper draw a circle of 24 cm, making the first cake and send for 15-20 minutes in the oven. From this amount of dough you should have 3 layers.
The finished cakes to cool on a wire rack. While preparing cakes, water (100 ml) mixed with sugar (100 grams) and boil the syrup, pour over 100 g of currants. Herme recommends that you leave the currants on the night, but I was not, I used it in a few hours.
Prepare the cream: chop the currants in a blender to puree, add the sugar, red wine (in the original recipe, the liqueur "creme de Cassis"), bring to a boil, add the melted chocolate and mix.
Cream whisk until stable peaks, combine with the cooled currant-chocolate mass.
Begin to collect the cake. Detachable form vystelit with cling film, put down the cake, spread on top of cream and berries currants. So collect all the cake and sent for a night in the fridge.
The next day prepare the ganache for the decoration of the cake: heat cream, add chocolate and fire, creating a smooth cream.
Apply ganache to the entire cake starting with the top.
