Finnish creamy soup with salmon
Looked recipes like soups on the website - that this is not found, so happy to share. By the way, this is the only salmon soup, which was a success and really liked not only to me but to the whole family, although my husband son and I are not consumers of these soups :)very gentle, hearty and delicious, just right for cold winter days :)

Ingredients

  • Salmon

    500 g

  • Olive oil

    3 Tbsp

  • Leeks

    1 piece

  • Potatoes

    2 piece

  • Cream

    200 ml

  • Potato starch

    1.5 Tbsp

  • Butter

    50 g

  • Water

    3 cup

  • Lemon

  • Bay leaf

    2 piece

  • Greens

  • Salt

  • Black pepper

Cut the leek into slices. In a saucepan of heated olive oil and stew the onion until soft.

Once the onions become soft add 3 cups water, throw a Bay leaf and bring to a boil.

While the water boils peel and cut the potatoes (I have small cubes but you can cut, of course, as you like)

When the water is boiling - put the potatoes, reduce fire and cook until cooked potatoes.

When the potatoes are cooked - put in a pot salmon and cook for 5 minutes. Then pour in the cream and stir.

Prepare a mixture of starch and water (in the original 1-to-1, but I mixed with a little extra water), stirring until complete dissolution of starch.

Then add our mixture to the pan and, stirring occasionally, until thick proverjaem soup. This item can be used as desired (the more starch, the thicker the soup), but I can say that it gives a special tenderness of broth, the main thing - do not overdo it :) Add to our soup salt and ground black pepper to taste, throw in the butter and remove from heat.

When serving, sprinkle with parsley or dill and, if desired, be added directly to the plate the juice from a slice lemon, which will give the soup a pleasant light acidity. Bon appetit! :)
