Dosas — Indian flat bread made of rice and beans. Bribed a new taste and ease of recipe. The dough to cook for a long time, but very easy, and baked for only 10 minutes. In the preparation of doses took into account simultaneously the recipe from the book on South Indian cuisine and the availability of the products in my kitchen. Ie basmati rice I substituted rice Kuban, oil safflower sunflower. It turned out very delicious "pellet", moderately salty, with spices and vegetables. I especially recommend in the post.

Cooking
1. Wash the rice and lentils with water.
2. Then pour water and leave overnight. Or for 8 hours.
3. After this time the mass swells. Rice and beans become a bit softer.
4. Drain excess water from the top, little of it remains in the ground.
5. Put the mass in the bowl of a blender and grind to obtain a semi-liquid porridge. She is such a beautiful, soft pink mass, no grains, homogeneous. The better the peremolet, the tastier the cake.
6. Add the spices and salt, stir. Put the dough in a warm place for 12 hours. Prescription weight should sour. I have the mass thickens, but do not turn sour. But I spent only 8 hours, not sustained, vital aroma throughout the apartment. The mass of clumpy, and I added 1-2 tbsp of water who are not fasting, and the milk. I decided to try to bake one pancake. So I was surprised that so well-baked "pancake".
7. Prepare the vegetables. Wash, peel. Onions and peppers cut into half rings. Finely chop the garlic. Potatoes boil. Fry first on a well-heated vegetable oil garlic, then remove. Put in garlic oil, onions, fry until transparent. To the onions add sweet pepper and cook on low heat until cooked peppers. Then put chopped small cubes of boiled potatoes, 2 minutes and remove from heat.
8. Bake doses. Take a nonstick pan or cast-iron (I f 16*20), heat well. Lightly grease (only a drop) the pan with oil, not more, otherwise the pancake will be in the middle with the rift. Fire support quiet (weak). Put 1 tbsp of the mass from the top to the middle of the pan...
9... and quickly spread with a silicone spatula in a circle, the thinner the pancake, the wider - the better. The dough is baked through instantly.
10. And just as quickly put 1 tbsp of the filling, preferably on the part where the dough is still not cooked.
11. Immediately close the stuffing with half a pellet. Flip is not necessary. Tortilla is very thin. After 1 minute you can put dosas on the dish.
12. With the pan removed easily.
13. The dough, of course, to cook a long time, but the pond very quickly, and the thinner, the better. Believe me, a thick pellet is not as tasty. In the photo I have shown a bit plump dosas, but I had to photograph, and the dough is baked immediately. The remaining pellet thin lace. Try to cook, it's delicious!
"Garam masala" is a mixture of ground spices: black and white pepper, cloves, cinnamon, nutmeg, cumin, cardamom, star anise, coriander. If you don't have "Garam masala", put these spices: 1 pinch in a mortar and smallscale.
