                        The classic hummus is prepared from a puree of Chickpeas with spices, but it can be prepared from beets, makes an excellent appetizer or sauce.                             At first I was not going to add a recipe, just thought to put in the diaries, step-by-step photos, but here everything is very simple.                             Boil the beets in salted water until soft. Cool, peel and cut into big pieces. In a blender, blend the beets, and all remaining ingredients until smooth. In a bowl, sprinkle with salt and freshly ground pepper. Serve as a snack with crackers, sliced fresh peppers, carrots and celery.
