Complicated, time-consuming option, but the bagels are REAL!!! Recipe from Olenka-Eliabel with carina-forum.

Products designed for 10 bagels (I got 8 PCs). To prepare the tea LEAVES: 125 g flour sift into a bowl and quickly to brew 100 ml of boiling water, continuously stirring. Leave to cool.
Meanwhile, pour 100 ml of warm water in a bucket of HP, sift 125 g of flour there too.
Then prepare the DOUGH: add the flour in the bread maker brew, the yeast and knead on the "dough". See after 5 minutes: if the dough is too dry, add a little water, subtracting this number from the remaining 70 ml.
Knead again the DOUGH in KHP: add to the yeast mixture the sugar, rest of water, 250 grams of flour, the yolk (protein leave for coating), salt. Mix. At the end of kneading add the oil. Allow to rise 1 hour 30 min.
Remove the prepared dough, let rest for 10 minutes. Divide into 8-10 parts. To cut, as you habitually: I make a hole in the piece of dough and wind then a bagel on the index palette around the circumference, and thus a donut is stretched to the desired size.
Grease with vegetable oil each bagel, then cover with foil or soaked in hot water and wrung out kitchen towel and let rise about 45 minutes. Preheat the oven to 200 degrees
Proceed to OBVERSE bagels: in a large pot boil water, to prisolit her a bit to scald the bagels one by one, gently sinking into the water, turning with a slotted spoon to the other side. They look at this stage is not very beautiful: the surface is a bit wrinkled, but in the oven all will recover !!!
Coat the bagels with protein
and sprinkle with poppy seeds.
Bake at 200 degrees WITH STEAM - the first 5 minutes, then reduce temperature to 190*C Oven for about another 15 minutes, 5 minutes before the end, quickly open the oven to release the steam. COOL ON A WIRE RACK. The recipe is adapted to use the bread machine, but the kneading is possible and manually. Bon appetit!
