Soup with pumpkin and spinach
The original recipe I got from a English cookery book, which the day before yesterday I brought a friend from London. It is called the Cranks Recipe Book, 1985. A very popular and beloved in England (according to a friend), plus she's a vegetarian. The book with no pictures, so what else piques my interest :). And the soup was very interesting.

Ingredients

  • Onion

    1 piece

  • Butter

    25 g

  • Pumpkin

    450 g

  • Spinach

    225 g

  • Tomato

    2 piece

  • Broth

    1.8 l

  • Salt

  • Black pepper

Cooking

Spinach, of course, meant fresh, but I was frozen. If You use fresh, it must finely chop.

Finely chop the onion.

Melt the butter in a saucepan.

Add the onion and fry until transparent.

Dice the pumpkin and chop the tomatoes.

Add vegetables and remaining ingredients in a saucepan. Bring to a boil, reduce heat and simmer about 20 minutes until the vegetables are soft.
