Cooking
First, take the paste from flour, water and eggs, knead the dough as for dumplings. May need more flour, and see for yourself how it behaves. Leave, covered with a napkin, for 15 minutes.
Meat (pork) cut into strips. Easiest to do if meat is slightly frozen. Better if it will be with fat.
Onion cut into half rings.
Fry meat in small amount of vegetable oil and how it will be almost ready, add the onions, soy sauce and dry garlic.
Roll out the dough thinly and cut it into noodles. I then stretched noodles by hand. Leave to dry slightly.
The author suggests to fry the noodles separately, but I took out the meat from the pan and fry in the remaining fat until Browning.
Now add the meat to the noodles, pour a couple of tablespoons of water and stew for 10 minutes. Frankly, I just mixed the noodles and meat, without doing anything.
The noodles are ready! Hearty, delicious and flavorful!
