Just want to dispel your assumption, this is not the Nougat, because in quotation marks. It's something between a soufflé - cream ice cream. A very delicate dessert. Recipe from "Cooking with confidence". On new year's table will be exotic.

Cooking
Pre-chopped fruit, candied fruit and nuts. Soak raisins in cognac.
Nuts I decided to bake without oil.
Beat the egg yolks with the sugar in the cream.
To put the container on a warm water bath and beat 10 minutes
while the cream will not remain clear trail from the whisk. Remove from heat and beat until the cream cools.
Cream immediately freezes and is covered with a crust.
Heat the honey over low heat for 3 min.
Beat egg whites to stiff but not dry foam.
Whisking, gradually add the warm honey:
the mixture should turn into a thick, lush mass.
From a Cup of honey don't put washing, put in it raisins with cognac.
Mix the whites with the yolk cream,
add dried fruit and nuts.
Build the form with cling film. To fill the resulting mass, cover and put in the freezer. When serving, flip the product on a dish, remove the tape. On top decorate with fruit and candied fruit.
