Meat kofta in Egypt
Jacket Belle rose. In Egypt, as in many other countries of the Middle East, there are many types of jackets - hot dish of minced meat with various additives. Jacket Belle rose ("kofta with rice") is one of the favorite and traditional food in Egypt.

The peculiarity of this dish is that the rice is crushed with maximum finely into flour. I milled a special attachment (for grinding spices) and sifted. Pre-rice (plain round) should be thoroughly washed and completely dry. The more rice, the more the viscosity of the shirt. I took 160 gr, but then increased to 200 grams. You can start with 160 gr, it turns out the more familiar "Russian" structure jackets, and then to try to your liking.

Mix all ingredients for sweatshirts: 500 gr of minced beef, chopped 160 grams in rice flour, 1 medium very finely chopped onion (I had red onion), 1 very large bunch of dill (about 10 tbsp of chopped dill), 1 tbsp dry mint, salt and black pepper to taste. Mix everything thoroughly and roll the mince in a food processor (a blender) for a minute, that it became homogeneous. Leave the meat for 15 minutes "rest".

Forming a small thin sausage of minced meat, about the way like the photo: I crumble in the hands of a small ball, flatten it and roll on the butcher left to right. Sausages obtain a dense and uniform thickness. Also make a jacket in the form of small balls.

Over medium heat heat the oil and fry the kofta. Honestly, we love eating it just like that but fry on low heat a little longer and under the hood (the first time, then remove the cover), although cooked very quickly due to the small size. This jacket I serve with a sauce of natural yoghurt, grated cucumber and spices (black pepper, dry mint, salt to taste). Just note that if the rice is milled finely enough, it will crack in such a fried shirt. But we go further, according to the traditional recipe.

Prepare a light tomato sauce: 5 large tomatoes cleaned from the skin, in a blender grind the tomatoes, parsley (to taste). Fry until Golden 1 medium onion (finely chopped), add tomato mixture and water (amount of water according to your taste, sauce should not be too thick - the main thing is that it covers the jacket, and that there is enough liquid for the cooking of rice), bring to the boil, season to taste with black pepper and salt (do not salt too much, we have already added salt in the sweater), diminish the heat to low and put in tomato sauce prepared, lightly fried jacket (although fry do not have it on prescription). Simmer for 10 minutes.

To extinguish at any your favorite sauce not too thick), tomato - traditional in this case. Alternatively, you can bake it in a sufficient quantity of the sauce in the oven (even without preliminary roasting, it does not matter). Serve with your favourite side dish.

The taste is very unusual. The rice has a slight viscosity, but at the same time and smoothe, mint, herbs and spices give the East a taste of this unusual dish. Jacket we got "stuck" for a long time, no wonder this dish is a traditional favorite. Bon appetit!
