Another tourism recipe I found flipping through an album of photographs from Lithuania. Excellent Turkey meatloaf - tender, moderately juicy, with a delicate taste, which is revealed through the combination of mushrooms, Turkey, and balsamic vinegar. Welcome to a small gastronomic tour of Lithuania.

It's a tradition in our family that the New year, we often meet outside the home. Usually we go to some new place with the possibility to move from city to city. 2011 was no exception and we went to Lithuania to rest, watch and eat!) This recipe we tried in a cafe near the Trakai castle. The school holds a sweet old man, who every day prepares something new. It has no permanent menu, so it simply reads You the options that we have today. We had a chance to sample the excellent mushroom soup of mushroom and Turkey meatloaf with mushrooms. I'm not sure I'm 100% faithfully recreated the meal that we were fed, but what happened, I loved it!
For cooking Turkey meatloaf, we need a good chunk of Turkey breast and oblong shape for baking, I have this cake pan.
Fillet cut along the long thin slices, cover with cling film and put to one side.
Applied to the slices of Turkey balsamic vinegar, spreading its culinary brush across the surface. Add salt and pepper to taste.
Cake pan put some butter and place in it layers of fillet so that the edges hang off the form. Just in case, I even cut off a fillet from a few small pieces that I can use to completely wrap loaf.
The rest of the Turkey finely chop and fry in butter, adding red wine vinegar, garlic, salt and a little paprika.
Finely chop the onion and fry it with the mushrooms in the butter. Here I must say that 100% I don't remember what exactly were mushrooms in the meatloaf, but the color was as close to the chanterelles. If You don't have chanterelles - not a problem, you can use any other mushrooms, only not be such a bright transition.
Ready the Turkey grind in a blender and add the grated Parmesan.

On top lay the mushrooms and the mushrooms put the remaining stuffing.
Roll to close, pour a small amount of cream, salt and pepper.
Bake the loaf for 35-40 minutes at 180 degrees in preheated oven. From pluses - it is beautiful both hot and cold.
