Description
Johnny cake is a sweet pancakes made of corn flour. The first mention about these pancakes dates from 1739, then prepared them in South Carolina, and they were called not "johnny" and "Journey-cake" that is, "Pancakes for travel". Over time, the geographical spread of this dish has changed and the name was distorted. Pancakes turn out very tender, tasty, with a distinctive flavor of corn.

Cooking
Mix corn and wheat flour, baking powder, soda and salt, sift into a deep bowl. Add the powdered sugar. To make the pancakes turned out fluffy, they are not long time to mix - it will be air bubbles, so that the sugar is dissolved quickly and completely, it is better to add the powdered sugar.
In another bowl mix wet ingredients - yogurt, eggs and half the norm of melted butter.
Pour liquid ingredients into dry ingredients, stir briefly.
Add the remnants of the butter, stir again and leave the dough for 10-15 minutes to cornmeal is soaked. The dough was not very thick, so the pancakes turn out is low. If you add flour, you can achieve a lush, beautiful pancakes, but they are not so soft and gentle.
Important! After proofing not stir again the dough, take a tablespoon of it with the edge of the bowl, lay out on a frying pan and fry from both sides on medium heat in a small amount of vegetable oil.
