Lean bean salad with tomato-soy dressing
Recently, the Boy had an article about the benefits of soy sauce Kikkoman, which proposed to mix it with the juice of tomatoes for salads. Despite the fact that I am familiar with a huge number of salads and fillings for them, this option met me for the first time. And I decided to try it. Turned out really well, and my piggy salad dressings was expanded to include another. I suggest to you to try this option, for example, in addition to a hearty vegetable salad with beans.

Ingredients

  • Beans

  • Garlic

  • Cherry tomatoes

  • Parsley

    1 handful

  • Soy sauce

    3 Tbsp

  • Lemon

  • Olive oil

    3 Tbsp

  • Salt

To prepare the products. Beans pre-soak for 4-6 hours, or overnight.

Rinse the beans and boil for 30-40 minutes.

At this time, prepare the croutons. Bread cut into uniform cubes, pre-cut peel (optional).

Grind the garlic.

Mix the bread with the garlic, salt, pepper and olive oil. *I do this in the package. Just put everything in the package, pour in oil and shake well. So bread mixed with garlic and uniformly saturated with oil. I also add a few chopped leaves of parsley - this is optional, you can add herbs of Provence, for example.

Mixed crackers pour on a baking sheet in a single layer and send in a preheated to 180C oven for 1-2 minutes until Browning. Then stir/flip them so they brown on the other side. Ready to leave the croutons to cool.

For the filling I used a tomato concasse. 2 medium tomatoes scald, remove the skins and remove the seeds. *My filling consistency has turned out like thick tomato juice if you need it thinner - is to RUB the tomatoes through a sieve.

Mix in a blender the pulp (or juice) tomatoes, 3 tbsp of soy sauce, the juice of half a lemon and a teaspoon of olive oil.

For the salad, chop the parsley and cut the cherry tomatoes into halves.

The cooled beans, croutons, cherry tomatoes and parsley folded into a deep bowl, add pepper to taste, season with the dressing and mix well.

The salad is served immediately, because the crackers can soak from the gas station. If the salad will be delivered later, then the gas station should defer before serving. *I think due to the soy sauce it can well be stored in the fridge for a few days and perfect for other salads or dishes such as pasta or rice. At least with beans, in my opinion, it's perfect.
