Аmaretti. Classic Italian almond cookies.

Cooking
Almonds into the time pour boiling water. Peel. Dry in the oven.
Grind in food processor into fine crumbs.
Add in almond crumbs, icing sugar and a pinch of salt. Mix well.
Whisk the protein to the steep peaks. Gently combine the whipped protein with almonds in several stages. Add almond flavoring. Stir the batter with a silicone spatula until smooth. The dough should be elastic but not liquid.
Shape dough into balls the size of a walnut. Option 1 - sprinkle the icing sugar on the baking sheet. Option 2 - roll in powdered sugar (like me) to Spread on the laid parchment baking sheet. The distance between the balls you need to leave about 5cm below during baking the cookies are glued together. Bake 15-20 minutes at 180*.
