Cooking
Mix cranberries + sugar + orange juice in a small saucepan over low heat bring to a boil. Cook until berries begin to burst and mixture to thicken. Remove the mixture from heat, allow to cool.
Finely chop the onion, fry in olive oil until caramel hue, add chopped garlic and bacon, seasoning the mixture with thyme and sage, sprinkle lightly with salt and turn off the heat.
Now add ground pork and pistachios, seasoning with salt, pepper and grated nutmeg.
Warm up the oven to 200 gr. and prepare choux pastry. Will proseem the flour with the salt. Melt in a saucepan some lard, adding a Cup of water to the fat began to burn.
