Orzotto with mushrooms
Risotto Estonian. Estonians claim that it is their invention. Judge for yourself: Estonian barley-Oder (oder) Barley in Estonian cuisine - all, cereal is the number 1!

Ingredients

  • Pearl barley

    1 cup

  • Mushrooms

    50 g

  • Onion

    1 piece

  • Dry white wine

    100 ml

  • Water

    700 ml

  • Cheese

    150 g

  • Salt

  • Black pepper

Cooking

Soak grains and mushrooms at least 0.5 hours. The longer the better!

Put cereal in a saucepan with a thick bottom on the stove, add a little mushroom water to it (water) coated cereals. Salt, pepper. Stew. Simmer, add water, simmer again until the barley is not going soft. Then when the barley is ready, add the grated cheese and stir until cheese is completely melted.
