Calamaro con besciamella. Italian cuisine includes a lot of different fish dishes. Today I want to offer you one of them I found in a Soviet magazine 90-ies and little me adapted to the traditions of Italian cuisine.

Cooking
Slice the squid rings. In hot pan put onion, garlic, mushrooms, calamari rings, quick fried.
Prepare sauce: in a pan put the butter, when it melts, add the flour, begin to fry, stirring occasionally. Then start the small portions add milk. First add 50 ml, stir thoroughly. Then add the remaining milk, stirring constantly. The sauce should thicken. Salt, pepper to taste.
Into molds or pots for baking spread sauteed mixture of onions, mushrooms and squid.
Pour the sauce, sprinkle with cheese. Put in oven and bake until Golden brown. The finished dish sprinkle with parsley.
