Moroccan pancakes
Unusual pancakes Moroccan baghrir. The distinctive features of these baghrir – highly porous structure and very light color, because the pancakes fry on one side only!

Ingredients

  • Flour

    300 g

  • Semolina

    100 g

  • Yolk egg

    2 piece

  • Water

    650 ml

  • Sugar

    1 tsp

  • Salt

    1 pinch

  • Leavening agent

    0.5 tsp

  • Yeast

    0.5 tsp

  • Honey

    7 Tbsp

  • Butter

    100 g

  • Vegetable oil

    1 tsp

First mix all the dry ingredients: flour, semolina, sugar, salt, baking powder, yeast.

Semolina we use firm Mistral.

Add the egg yolks and vegetable oil.

Then pour the water, stirring constantly. Water can take a bit more, look at test: it must be of such density as the conventional thin pancakes.

Cover and leave to rise at least 45 minutes, maximum 1 hour.

Oil and honey melt. This sauce we coat the pancakes.

Fry pancakes on one side over medium heat, without overheating the pan. The dough is poured strictly in the center and not distributed in the pan, as we do with regular pancakes. Fried pancakes quickly, remove when the top stopped sticking to the hand.

Removed the pancake smeared with sauce on both sides. Here he is both top and bottom.

If the dough is thick, the pancakes will not be actively bubbling. Do not mix the dough.
