Recipe post, mostly because of the sauce from red wine, as the site did not find any recipe for this dish, loved by the Europeans! Meat you can use any as pork and beef or lamb! Try it - it's delicious!

Cooking
Meat cut into large sticks (like beef Stroganoff).
Fry in a very hot pan until Golden brown; salt and pepper; reduce the heat.
Now we have two options: spread the meat and make the sauce (more French) or simmer the meat in the sauce ( more Russian version) I decided to go the second way, moreover, this option is also quite common, especially if the meat is tough. For this finely chop the shallot.
Add to meat and simmer for about 3-5 minutes; add tomato paste, stir (2-3 min).
Add flour ( optional, and need to thicken the sauce, depending on what side dish we are cooking); add wine, broth, herbes de Provence, Bay leaf and simmer until the meat is cooked.

Note: the wine for this sauce should be dry, but not sour!
