Cooking
Pierce eggplant in several places with a fork and bake along with the peppers in the oven until cooked.
Gently peel the eggplant from the skin to keep the tails.
In minced meat add parsley, grated on a grater onions and garlic 2 tooth., of soaked and squeezed bread, parsley, salt and pepper to taste, cumin (optional).

While baked eggplant prepare the sauce. Heat the 2 tbsp oil and gently stew the garlic, add the tomatoes, salt, Tabasco, if you like sweet paprika to taste and cook the sauce on low heat until evaporation of the liquid.
