Soup with zucchini and cottage cheese dumplings
This unusual and light soup variety to the menu. Minimum fat, maximum benefit and taste. Quite simple to prepare.

Ingredients

  • Cheese

    100 g

  • Zucchini

    600 g

  • Yolk egg

    1 piece

  • Semolina

    3 Tbsp

  • Flour

    1 Tbsp

  • Basil

    2 Tbsp

  • Broth

    1.2 l

  • Dry white wine

    100 ml

  • Salt

  • Black pepper

  • Nutmeg

  • Milk

    1 Tbsp

For soup we will need the vegetable broth. Cook him one of those vegetables that is in the house. I have in the soup are carrots, onion, celery, parsley root. Nothing is fried.

For cottage cheese dumpling, combine the cheese, egg yolk and milk.

In a large pot boil plenty of salted water. Using 2 teaspoons form of dough 24 dumplings. Drop gnocchi into boiling water and cook until tender, about 10 minutes. Important! During boiling, diminish the fire and cook dumplings, but do not boil. The dumplings are ready, take out of water and leave in a warm place.

In a saucepan boil the broth and wine.

Add zucchini strips and slightly blanchere them. Season with salt, pepper and nutmeg.

In a deep dish, pour the hot broth with strips of zucchini. Add gnocchi.
