Cooking

step-0
There is a quick and effective way to remove kidneys from peculiar smell without a long preliminary soaking. You have to wash them, cut into large pieces and generously, very generously fill them with baking soda for 40-50 minutes.
step-1
Then very carefully wash the buds under running water to completely remove the soda, fill them with cold water and bring to boil. Drain the water, and the kidneys, again very well rinsed under running water, put in pan, again cover with cold water, add spices and cook until tender.
step-2
Cooked buds to cool, cut fat and cut into thin slices. Cut the ham into strips. Onion thin quarters of the rings. Mushrooms thawed and cut into strips.
step-3
The buds are lightly fried and put in a bowl.
step-4
Mushrooms and fry until evaporation of liquid, spread to the kidneys.
step-5
Add the ham.
step-6
Pour fried onions. You can cook the mushrooms directly with the onions. I fried separately only because of mom - she's Luke's not eating, she had a separate grill - no onions. Mix well. Salt and pepper to taste.
step-7
Thoroughly mix the sour cream, ketchup, flour and milk, add chopped greens.
step-8
Pour the sauce into the meat mixture and stir.
step-9
Spread the mixture in the cocotte.
step-10
To sleep cheese, grated on a fine grater.
step-11
Put ramekins in a hot oven (180*C) and bake until Browning.
step-12
Julien is ready to remove from oven, cover with a cloth and cool slightly to avoid burning yourself on the hot ramekins. To decorate and serve.
