I make this souffle very often, it is one of the favorite dishes of my family. Last time, we frequently go outdoors, and I make this souffle in a cocotte with lid that you can eat this dish at a picnic. This is gorgeous! Very tender and tasty!

Cooking
Fish wash, cut into pieces.
The Parmesan and beat with a blender.
Separately, beat egg whites with a pinch of salt.
Gently stir in the fish mass.
Deep baking pan filled with hot water. The mass expanded into the molds, put them in the pan. Cook in a water bath in a preheated 180 degree oven for about 25 minutes.
