Cooking
In the sifted flour cut pieces of butter and grind into crumbs. I always do this with a mixer with beaters for whipping. An ideal small baby. Add sugar, mix well.
Beat the yolks with vanilla sugar until whitening.
Pour the yolks into the flour crumbs and quickly knead the dough.
Roll into a ball, wrap in cling film and send in the cold for half an hour
Divide the dough into 6 equal parts and lay on the molds, forming the basket with your fingers. My shape with a diameter of 10 cm Out of shape with a diameter of 11 cm you get 5 baskets, and from 6 cm to 12 baskets.
Bake 10-15 minutes at 180 degrees. Remove from the forms, cool.
To prepare the cream. Whip very cold heavy cream, gradually adding sugar. I added 2 tablespoons If berries are sweet, for example, blueberries, sugar can not add at all or add 1 tbsp sour If, like me, add 2 tbsp or more. Be guided by your taste. To the whipped cream add the cream cheese and stir with spatula. Whipping is not necessary.
My basket - shifters, they have a recess in the bottom. So I flipped and filled with cream from pastry bag. Sprinkled on top of frozen currants - red and black. Currant pre-dried with a paper towel. But still better to make tarts with fresh berries, it leaves no residue on the cream. Although my remaining two baskets survived a night in the fridge, the berry does not drip.
