Cooking
Because the curd cream meringue we will put raw yolks, the eggs need to take necessarily integer, and be sure to wash them with soap and water, since most bacteria and viruses live on the shell. Then break the eggs and separate the whites from the yolks. Proteins going to the meringue, and the yolks - and butter cream.
To proteins add a pinch of salt and begin to bring down the blender (nozzle - whisk) first on the little speed, then gradually increase them to the maximum. As only protein will get in the foam, add 1 tablespoon of sugar. When included about a third of the sugar, add vinegar and starch. In the original recipe, the corn starch and wine vinegar. I also have corn starch, but the Apple cider vinegar. Just answer the question can I take potato starch and regular vinegar you can.
Gradually, continuing to knock, add the rest of the sugar (total 220 g). Bring down until complete dissolution of sugar crystals. It turns out tight, stiff foam
Distribute the "dough" on zastenok parchment baking sheet and put into the oven at 220 degrees for 10 minutes. Then reduce the temperature to 170 degrees and hold for another 10 minutes.
Take out, cover with a towel and let cool to lukewarm. In the process, the meringue will settle a bit. It is not fatal.
While the meringue is cooling prepare the cream. To the cream cheese add the egg yolks, 1 tablespoon of sugar (more is not necessary, because the meringue is sweet enough) and 1 sachet of vanilla sugar.
Shoot down everything in a blender until smooth. The cream is ready!
The cooled meringue is quite densely sprinkle with powdered sugar and cover with another piece of parchment, slightly larger than our meringue.
Turn over and carefully remove the parchment on which to make our dessert. The photo is not very appetizing, but it's working now.
Evenly distribute the cheese cream on the meringue.
Lay out slices of peaches. Instead of peaches you can take strawberries, raspberries, figs, melon, apricot etc.
Using the bottom parchment turn our dessert roll. Lightly roll the loaf on the table, but not much to pin down.
Cut into pieces (I got 12 pieces) sent in the fridge for about 30 minutes, the cream has frozen and serve!
