Scana soup with fried mushrooms
Scana chowder - the so-called liquid mashed potatoes in the village of Nizhny Novgorod region. I decided to add sautéed mushrooms and had a wonderful, meatless soup.

Ingredients

  • Potatoes

    5 piece

  • Mushrooms

    300 g

  • Onion

    1 piece

  • Vegetable oil

    4 Tbsp

  • Spices

    1 tsp

  • Greens

    0.5 coup

Potatoes wash, peel. Cover with water, add salt and put to boil.

The pan pour vegetable oil Oleina.

Onion peel and finely chop. Fry in vegetable oil until transparent.

Mushrooms cut into plates. Send to the onions. Season with salt and pepper. Cook for 8-10 minutes.

When the potatoes are cooked, drain most of the liquid in a separate container.

Potato mash "Tolkuchka" to the state of puree. Add turmeric (for color) and spices.

Pour potato broth, bringing the soup to the desired consistency. Add fried mushrooms and mix. If you are preparing for a few days, the remnants of the broth is better to pour out, because the soup after cooling will thicken.
