Cooking
The cake is not too rich, I baked it in shape with a diameter of 21 cm For the crust beat the eggs with condensed milk until frothy.
Pour the sifted with the starch and cocoa flour. I do this with a mixer on low speed.
Dissolve citric acid (I have TM "Haas") in three tablespoons of water and put soda. Pour the foam into the dough and quickly stir.
Pour into prepared pan and bake in a preheated 180 degree oven until tender – 20-25 minutes, checking with a toothpick. Remove the cake from oven and cool on a wire rack. Then cover with a free cover and allow to ripen – it is better to leave for the night.
For impregnation to dissolve the sugar and citric acid in water and add brandy. Mix well and soak a half-cut the cake. It is convenient to do this with a silicone brush.
Grease both cake with a thin layer of strawberry jam and leave to soak for half an hour.
For the cream mix half a tin of condensed milk and egg yolks over low heat and bring until thick, stirring constantly. Remove from heat and add vanilla. Cool. Beat butter and white, then gradually adding the condensed milk, beat in a lush cream. Add cocoa and again beat. I managed to forget to add cocoa to the cream and realized that just by making a photo of the cut.
To mark the lower layer with a thick layer of cream and cover the second half. Put on top of a plate and flatten into a small load with a pound enough. Put into the refrigerator for an hour.
For frosting: melt broken chocolate with butter, stirring until smooth over low heat.
Lubricate the top of the cooled cake in a thin layer of strawberry jam and cover with frosting. Pour into the centre, giving freely to drain on the edges. Decorate according to his ability and cooling for half an hour until the glaze hardens. If you love crispy frosting – put in the freezer for 20 minutes.
Serve cake chilled, better than a Cup of coffee.
