Vegetable soup peaches with rice
This unusual soup can be eaten cold or warm. This soup is perfect for a Lenten table, and for children.

Ingredients

  • Water

Boil 250 ml of water, add a pinch of salt, add the rice company Mistral "Indica" or any other figure of this company. Cook over medium heat until tender. To cool the rice.

Walnuts fry on a dry pan or in the microwave. In the microwave it took me 4 minutes. The nuts are slightly brown, and peel them easily come off. Clear the nuts from the peel and chop.

Since it is winter and fresh peaches are hard to find – take the canned ones. I have half canned peeled peaches with a volume of 425 ml. One half of the peach to leave for decoration, the other with syrup puree them in a blender. Then add ¾ part of the cooled rice, peach - Apple juice and whisk it all until smooth. Of course, you can use fresh peaches. To do this, peaches (300 g) to pour water (250 ml), bring to boil, cook for 5 minutes, add 100 g of sugar, stir again, bring to the boil and remove from heat.

Pour the soup into bowls, put a portion of the remaining rice, peach slices, sprinkle with nuts. Can decorate with a sprig of mint or a clove buds, which give a nice subtle flavor!!!
