Rolls of eggplant in Italian
Saw this recipe and realized that I urgently need!!! It is done! Saw the recipe, by the way, on Russian site, so it is not my fault that everything is foreign, not my idea, but I was prepared and happy to share. A special discovery was for me a delicious pasta, I wanted to eat it immediately and don't smear!! I advise everyone! With availability of such products, remember that there is such a yummy!!!

Ingredients

  • Olive oil

    2 Tbsp

  • Sundried tomatoes

    4 piece

  • Basil

    1 coup

  • Pine nuts

    50 g

  • Anchovies

    3 piece

  • Ham

    100 g

  • Mozzarella

    2 piece

  • Salt

  • Black pepper

  • Oregano

  • Eggplant

    2 piece

Cooking

Cut eggplant into slices of 0.5 cm I Got the eggplant taste bitter, so I did not soaked in saline solution.

Fry in a griddle pan until soft and dark stripes. If this is not the pan, can fry on the usual small amount of olive oil, then spread on paper towels to absorb excess oil.

Pine nuts fry on a dry pan, cool.

In blender, chop sun-dried tomatoes, Basil leaves (leave some for garnish), pine nuts, anchovy fillets, and pepper. Add the olive oil and punch again.

Consistency - soft paste. Here I want to take the bread and eat all that pasta...

Mozzarella cut into slices. The plate of eggplant put a slice of prosciutto (dry cured ham), apply paste. Put a piece of mozzarella, a Basil leaf, fold it in roll.

Drizzle with olive oil, sprinkle a little oregano. Put into the refrigerator, serve chilled snack!
