Chocolate cupcakes
Say, "Not new!" And you will be absolutely right. When I was looking for a recipe for this cake (I call him the usual us word), then tried out other options. It seemed, at first glance, they differ in small details, all the same, when I've tried, I know that ratios and proportions, additives play the most significant role - like them or not in the end. This recipe is 100% mine!!! And I bake it repeatedly. Never once he did not disappoint me! The dough is lush, tender, flavorful! Highly recommended! The recipe is already known author lemon cupcakes in my performance - Irina Kutovoy. I never cease to thank this wonderful person!

Ingredients

  • Flour

    160 g

  • Powdered sugar

    120 g

  • Butter

    130 g

  • Chicken egg

    3 piece

  • Cocoa powder

    45 g

  • Milk

    150 ml

  • Salt

    0.25 tsp

  • Leavening agent

    2 tsp

  • Cream cheese

    300 g

  • Condensed milk

    1 can

  • Butter

    150 g

  • Powdered sugar

    50 g

Cooking

Butter room temperature vzbit with salt and sugar. Enter the eggs one by one, each time well whisking.

Pour the milk and add dry ingredients - flour with baking powder and cocoa.

Mix well. The dough grease consistency. It may happen that the eggs are very large, then the dough can "thicken" one-two tablespoons of starch (with me this has never happened!)

Put the dough in molds (paper or silicone) is not more than 2/3 of the volume. Cover with foil.

Bake at 180 degrees under foil for 15 minutes, then take it off and pester another 15 minutes (check out the splinter). Do not press tightly to the foil from sticking (like in my photo) to marusechka. Of course, it does not matter if you will make a creamy "cap".

While the cupcakes are cooling, prepare the cream. All components of the cream should be at room temperature. Beat the cheese with boiled condensed milk.

Add the oil and beat again. If necessary, to taste add the powdered sugar (I had the sweet and condensed milk). The cream can be cooled before the decoration. It's not as "strong", like the classic oil and "sustainability" depends more on the quality and quantity of oil.

Of the cooled cupcakes, remove the middle and fill it with cream or other fillings. I used chilled (a day in the fridge) chocolate sauce from the recipe "Pancakes Budapest". A very advantageous option!!! I realized that this sauce is a godsend. After the fridge it becomes the consistency like plasticine. Very tasty!!! It is possible to find many worthy applications ;-)
