Royal cheesecake with berries
Amazing cheesecake with a delicate shortbread dough, delicate cottage cheese, fragrant and juicy berries, mouth-watering sour cream under a blanket. My mother for many years preparing this version of the cheesecake with sour cream top with berries or without it's always delicious.

Ingredients

  • Flour

    1.5 cup

  • Brown sugar

    0.5 cup

  • Butter

    75 g

  • Chicken egg

    1 piece

  • Salt

  • Cheese

    350 g

  • Brown sugar

    3.5 Tbsp

  • Semolina

    1 Tbsp

  • Chicken egg

    1 piece

  • Vanilla sugar

    2 tsp

  • Salt

  • Potato starch

    1 Tbsp

  • Cherry

    3 handful

  • Black currants

    2 handful

  • Sour cream

    250 g

Berries wash and leave to thaw. Sift one Cup of flour and mix it with sugar and salt. Add the butter from the refrigerator, triturated with the sugar flour mixture.

Add the egg knead the dough, it should be soft and not stick to hands. If needed add more flour, a lot depends on the quality and size of eggs. The dough wrap in cling film and refrigerate.

Curd mix with 2.5 tablespoons of sugar, semolina, vanilla sugar, salt and egg.

Thoroughly knead the filling.

In the form of 22cm. lined with parchment, spread the batter and distribute it in a thin layer along the bottom and sides. Spread cottage cheese mixture.

Turn on the oven warming up to 200g. Cottage cheese mixture preparative starch. It will absorb the juice from the berries.

Add the berries and sprinkle with 1 tablespoon of sugar.

Spread the sour cream on top. (warn with sour product which is composed of gelatin and vegetable oil, the dish will not work it will flow) Bake at 200 gr. 40-45 minutes.
