The ingredients list is banal to a disgrace... But! Three dominant flavors: beet, soy sauce, and some strong broth of horse meat gave a very interesting result. Warm, rich, spicy and very unique taste.

Horse is my favorite for soups! Brand diet meat very thin and with extraordinary taste and aroma. The only downside is the long cooking. Since horses don't usually just walk by feet, but also run a lot, then the minimum cooking time - 3 hours. And to prepare a strong broth, you will need 5-6, and then 7-8 hours. It does not bother me and if you can buy a piece of horse meat on the bone, the broth is cooked and frozen for future use. Today I'm going to make soup out of such a freeze.
So, let's begin. Clean and wash all of our vegetables. Beets grate on a coarse grater or cut into very thin cubes.
Carrots three on a coarse grater. Cut 1/4 onion-rings.
In a saucepan, or deep skillet, pour 2 tablespoons mustard oil (you can substitute any vegetable). Add beets and pour 10-15 tablespoons of soy sauce. I Use the sauce "Wok" TM "Kikkoman". The amount of soy sauce depends on whether you have pre-salted the broth! Be guided by taste. But for my taste (even if the broth was pre-salted) to a minimum of 10 spoons. Simmer the beets for 15-20 minutes.
Add to beets and carrots promoseven another 10-15 minutes.
Add finely chopped celery and bell pepper. Simmer for 10-15 minutes.
Fill with broth. Cook for 15 - 20 minutes. 5 minutes before end of cooking salt, pepper and add dried tomatoes and Bay leaf. The soup is ready! Of course you can eat immediately, but better to let it rest and infuse for at least 30 minutes. Bon appetit!
