Umbrico is a luscious custard cake with cottage cheese cream.

Cooking
Pour into a saucepan the water. Add the butter and salt, stir thoroughly and put on a slow fire. Once the mixture comes to a boil, enter a thin stream in the flour and continue to cook on very low heat for 2-3 min., stirring constantly.
Now the mixture should be a little cool and drive balls. Mix until homogeneous dough.
Take a baking pan, covered with parchment paper, grease with oil. Using a pastry bag or use two teaspoons spread the dough on a baking sheet in balls size of small walnut. Leave spaces between the balls 3 cm, as the dough during baking increases in volume in 2 times.
Bake cakes for 25 minutes at 200*C. Then the temperature was reduced to ~ 160*C and finally dried in cakes for another 15 minutes. Towards the end of baking switch off the oven, open the door and give baked products to cool slightly. If the cakes are well dried, then the product obtained is hollow inside and not fall off.
For the cream: curd grind with sugar, add sour cream or cream (if you add cream, then they must first beat), vanillin. All together thoroughly and again beat well (the filling should be tender and light).
Ready cooled cakes stuffed with cream using a pastry bag or cutting cakes on the side, fill them with cream using a teaspoon. I cut a hot knife cap have cake and filled with cream.
