Cooking
For the test of the sea salt we will need flour, large sea salt, 2 protein, 250ml water 50g rosemary.
Sift flour, add salt, proteins, water. Rosemary finely chopped with a knife. The yolks will be useful for brushing over the dough.
All the ingredients for the dough mix. Knead steep elastic dough.

Cut into thin slices of lemon. Spread on top of fish. On top of lemon put the Basil leaves.

Cut off the excess dough at a distance of about a centimeter. Do "beautiful" tail. The remaining dough can be baked potato halves with the stuffing, it turns out very tasty.

Bake in the oven at 200* 30-40 minutes. (It all depends on your oven)
Carefully cut a "lid" of dough and remove it.
Remove baked lemon and fish skin. Pour the fish with olive oil extra virgin and lemon juice. Bon appetit and don't forget a glass of cold white!
