Cream
My favorite cream for ECLAIRS. It can be served as dessert or to use in desserts and cakes.

Ingredients

  • Milk

    600 ml

  • Sugar

    70 g

  • Flour

    30 g

  • Corn starch

    30 g

  • Cocoa powder

    5 tsp

Divide the milk into 2 parts: 200 and 400 ml. of the Flour and starch mix and add 200 ml of milk, beat well with a whisk to avoid lumps. 400 ml of milk add sugar and cocoa, also whisk.

Milk with cocoa and sugar, put on medium heat. Not boiling, pour it in milk with flour and starch. Cook until thick, stirring constantly.

Ready.

If serving as a dessert, then immediately poured into molds and allowed to cool
