Another recipe traditional Arab festive cookies, which is an indispensable attribute of any Arab celebration. Due to the variety of fillings mA Amul remains the most popular cookies all year round and is a favorite cakes for tea in the Maghreb.

Cooking
I used a glass 250 ml. In a large bowl, combine 1 Cup flour, semolina and sugar. If you do not plan to use orange flower water, can in this step, add the flour vanilla. Add 2 tbsp of orange flower water and gently with your fingers stir it into the dough (this is optional step). Vmestie the dough after complete cooling (this is mandatory), it is very pliable, smooth and soft. If possible, do not add too much additional flour. Leave the dough in a bowl covered with a towel, for 3 hours, but preferably overnight.
Filling 1: honey. If you are the enemy of heat treatment of honey - below I will give options for other toppings for mA Amul. Over medium heat, heat ghee, add 1.5 tbsp flour and sesame seeds, fry until Golden brown (3-4 min). Add the honey and bring to a boil, stirring constantly, until thick. Will not overdo it, otherwise the honey will harden. Add rose water and nuts (if desired) and let cool.
Honey filling turns out very flavorful and really tasty. The combination of sesame and honey is very harmonious. It is necessary that the filling of honey turned out to be very plastic and dense. Depending on the initial density of honey have to control the amount of added flour if the honey is very liquid - the best flour to take a little more.
Knead the dough for 5 minutes. Make dough balls the size of a small walnut. Honey and Turkish delight - balls slightly smaller in size. Dark balls is a stuffed date paste. The recipe listed below. The idea of doing the filling of Turkish delight for me was very new, but this stuffing is one of my favorites. I bought the usual Turkish delight in the box, lightly dusted with powdered sugar. Cool biscuits and before serving, garnish with powdered sugar, as traditionally is done in Arab countries.
The structure of the cookie due to the semolina turns out to be very unusual. It is quite dense and does not crumble, but at the same time very soft. Dough - slightly sweet, both the filling - very tasty, fragrant, bright and unusual.
