Chicken patties
Very simple to prepare, juicy and incredibly tasty burgers that can be prepared in advance and just before serving, bring to readiness in the oven for a few minutes. Recipe from living magazine "Russian classics of the XIX century tavern".

Ingredients

  • Chicken fillet

    1 piece

  • Chicken wings

    2 piece

  • Butter

    2 Tbsp

  • Cream

    3 Tbsp

  • Salt

  • Black pepper

  • Yolk egg

    1 piece

  • Bread crumbs

    4 Tbsp

Fillet wash, dry, cleaned from the films. From wings to cut the bone, leaving some meat on the tip, well-kept, to steaks, to clean up, just weld it.

In the original recipe it is proposed to cover the fillet with foil, chop it well with a rolling pin to mince, to remove the remaining film. I didn't do it, because blender will grind meat in the meat more than perfectly. Fillet should be cut into small pieces, add the butter, it should be 20% of the total weight of the meat.

Be ground so finely as possible. Little by little add the cream and knead well minced. Season with salt and pepper.

Moisten your hands in water, form patties, stick a bone, send in the freezer for 30 minutes.

Beat the yolk, add a little cream. Spread it over the cutlets, roll in breadcrumbs and fry in a little olive oil until Golden. Transfer to a baking dish and cook until ready at 180*C in convection mode for 15-20 minutes.
