Eggplant with honey and almonds
The recipe is very simple, I'm sure many Housewives stuffed eggplant in different variations, including for Lenten table. Today I had mushrooms and ground almonds. For "Fast from Moulinex"

Ingredients

  • Eggplant

    2 piece

  • Garlic

    4 tooth

  • Onion

    1 piece

  • Almonds

    2 Tbsp

  • Cherry tomatoes

    4 piece

  • Greens

  • Pepper white

  • Seasoning

  • Salt

  • Mushrooms

    200 g

  • Green olives

    8 piece

Cooking

Eggplant cut in half lengthwise, sprinkle with salt and leave. Mushrooms cut into thin slices (I left the mushrooms whole).

Finely chop the garlic and onion (I had a leek)

Greens chopped. Cherry cut in half. Rinse the eggplant and fry each side for 5-7 minutes. The flesh is to choose and chop coarsely.

Fry on oil onion and garlic, add the mushrooms, cherry tomatoes, flesh of the eggplant, sprinkle with herbs and salt. Stew a few minutes.In the end, throw greens and chopped olives. Almonds to grind.

Bake 15 minutes at 180 C in the oven.
