Cherry jam without sugar
Previously of sugar in Russia almost was not. The first small factory for processing of beet built in the province of Tula only in 1801 , and sugar coming in from abroad was so expensive that to use it for jam could not afford even the people are very wealthy. Often the sugar was replaced with honey. In the old days it was a lot, and it cost much cheaper imported sugar. But cooked and without honey, uparima berries until thick for 5 to 6 hours. We need two containers for the water bath. The first water volume is larger, the second for cherry volume is smaller. I have this pan and enamel bowl. The gap between the tanks should be such that easy and it was convenient in the cooking process to pour water for a bath. When all preparations and calculations completed, put a pot of water on the stove and bring to a boil.

Pour frozen cherries into the prepared bowl. Cherries are not mine, not defrost. Immerse the bowl of cherries in a pan with boiling water.

The first 30 minutes, the fire must be strong. There will be a lot of juice, it almost cover all the cherries. Next, within the hour, cook the cherries over medium heat. And diminish the fire. Total cooking time 3 hours. Monitor the water level in the pan, if necessary, water pouring.

The original cherry was 600g and cooked it for 2.5 hours. My tutu with a cherry on 300g optimum and it seemed to me a time of 3 hours, to cherry compote turned into cherry jam in taste and consistency. It all happens in the last 30-40 minutes.

Take out the bowl from the saucepan. The hot jam to cover the film so that it touches the surface of the jam, allow to cool, transfer to a sterile jar and store in the fridge. I got a jar of baby food 80g, is not complete.
