Laguage Chia with sauce sipsi. I grew up in the North Caucasus, in the Republic of Adygea, and I'm no stranger to the Adygei cuisine. She has character - she is strict, restrained, there is nothing superfluous. But in this simplicity lies a special elegance Adygei cuisine. I want to introduce You to one of the most famous Circassian dishes - cold meats with sauce sipsi. Help yourself to health!

Ingredients

  • Beef

    700 g

  • Garlic

    3 tooth

  • Onion

    2 piece

  • Salt

  • Allspice

  • Broth

    500 ml

  • Flour

    1.5 Tbsp

  • Butter

    75 g

  • Onion

    0.5 piece

  • Paprika sweet

    1 tsp

Beef cut into small pieces and boil, having lowered in boiling salted water.

30 minutes after the start of cooking, add the chopped large slices onion and pepper. Cook until soft.

Ready take out the meat from the broth and put in another bowl and sprinkle with salt. If You have any Adygei salt, ideally you need to use it. If You failed to buy it, you can mix ordinary table salt with a small amount of coriander, paprika and dried garlic. No need of spice - don't worry, the dish will still be delicious. Garlic passed through the press or grind with a knife. Add the garlic to the meat, well close the bowl with a lid and leave for at least an hour so the meat has absorbed the flavor of the spices.

Meanwhile, cook sauce sipsi. At the hot pan put oil, once it melts, add cut into quarters onion.

Wait, when the onions become soft and remove from the pan. Pour a thin layer of flour and lightly fry until cream color.

Add the paprika and a little broth, stir well. Hot broth in which the cooked beef, small portions pour into the pan, constantly stirring to avoid lumps.

Bring to medium thickness on the heat low and allow to simmer for 5 minutes. We taste - if the sauce is not salty enough, add Adyghe salt or regular table.
