Cooking
Duck wash, dry and cut into medium pieces. In a pot over 3 - 4 l melt the butter and fry the duck pieces. Fry about 15 minutes, over medium heat, stirring.
Onion cut into half rings, put the meat and fry until it is transparent. Salt.
Potatoes clean, cut into medium dice. Put in a large kettle, sauté over high heat 3 minutes, stirring. Mushrooms ( in my case, chanterelles) to defrost and add. Also add the sliced peppers, it is appropriate here to use frozen. Stew everything for 5 minutes on medium heat.
Pour in the boiling water, completely covering the contents. Bring to boil and simmer over low heat until cooked potatoes and duck.
Add a sprig of dried mint and Basil, it needs more salt to taste.
Wash and dry green onions, chop it finely and add to the soup. Bring to boil and remove from heat. NOTE : In order to prevent rapid acidification, it is necessary to boil the greens in the soup or add when serving in a bowl.
