Clause-cookies with a date paste
This amazing Arab cookies like no other. Savoury pastry with a bright taste of cardamom perfectly complements the date-pasta is homemade, natural sweetness which compensates for the complete absence of sugar in the recipe. Undoubtedly, one of the favorite cookies in the Arab countries.

Date paste is extremely popular in the Arab world. It is prepared from soft figs with a thin dark brown (black) skin. These dates are sweet by themselves, so the pasta is not added sugar. Pasta ready to sell, but I prefer to do it myself. Thoroughly wash the dates, fingers removing rough skin, stalk and seeds. We need 2 full cups of dates (I use a glass 250 ml). Skip dates through a meat grinder (a blender will not handle it) to a paste (if necessary, noise 2-3 times, depending on the softness of dates). Try toothpaste on the sweetness and lack of lumps. Add in paste of 1 tsp cinnamon and 2 tbsp sesame seeds, mash it thoroughly between the palms of our mass, then add 3 tbsp oil and knead the paste like dough, until completely absorbed dates oil. It turns out fragrant natural date paste, which is widely used in the Maghreb in the manufacture of biscuits. If the dates are too hard and not sweet, we can offer the following filling: 2 cups peeled washed and finely chop dates and pour 125-160 ml of water, add 0.3 cups sugar (depending on sweetness of dates), cook on medium heat for 5 minutes, cool and blend in a blender (be careful with the blender cannot cope). Add 1 tsp cinnamon and 2 tbsp. of sesame seeds, stir, add 1-3 tbsp vegetable oil depending on the consistency of mashed potatoes - it should be thick.

Dissolve the yeast and sugar in a quarter Cup of warm water. Mix in large bowl the flour, baking powder, salt, add 1 tsp. (without top) powder cardamom. The cardamom is very rich taste and smell, if you do not like - replace with any favorite spice or add a little less cardamom. Add the flour, the yeast (which is already covered by the cap), and vegetable ghee (softened).

Knead the dough, gradually add the remaining water (3/4 Cup). The dough is very smooth and does not stick to hands. Control the amount of water depending on the flour you may need slightly more or less water.

Roll out the dough into a rectangle of size 20*40 cm Spread on the rectangle of the date paste, separating the pasta pieces and hands, stretching to desired thickness. The thickness of the dough and date paste I'm doing the same and a little plump, according to our taste. You can do all much thinner then the cookies will be smaller and sleeker. Form a loaf.

Send a roll for a while in the fridge to make it easier to slice. With a sharp knife slice the roll into pieces with a width of 1.5-3 cm. Place them on a baking tray lined with oiled parchment paper, brush the surface with egg.
