Long spotted the recipe for this cake. And 3 November was just an excuse to cook it – my birthday. Custard, cream, praline, hazelnut cake – turned out very tasty and tender cake!

According to the original recipe ingredients have in 2 times more – the cake is a rectangular 30 × 40. But as the guests at the birthday party had a little amount of ingredients I reduced 2 times and made a round cake (used a detachable form in diameter 24 cm).
First make the praline. Sugar (100 gr.) melt on low heat, add nuts (hazelnuts 100 gr.) and, stirring, bring to a Golden brown sugar. Mass spread on a greased baking tray and after cooling and hardening, grind in a blender so that remained small pieces (leave some pralines for sprinkling on top). Here I have a problem 1. Don't know what was sugar, but he did not want to be liquid. The sugar is converted into white flakes, i.e. it seems to "melt", but the color was not brown, but remain white and do not freeze. I go buy a new sugar didn't have time, and not the fact that you will not get the same. So instead of sugar I added 1.5 tbsp of liquid honey. Cooks to a dark Golden color and shifted the weight on the pan. After 15 minutes, he's well stuck. And then came the 2nd problem. I burned a blender. Had the old "antiquated" way to shift the praline in a couple of bags and smash with a rolling pin into small pieces.
Next, prepare walnut cake. A detachable form to cover with baking paper.
Proteins (7) beat until strong peaks.
Gradually add the sugar (100 gr.), chopped walnuts (150 gr.) and flour (2 tbsp).
Divide the dough into 3 parts and bake at 170-180 * With ~ 15 - 20 min.
Cream No. 1 (custard): yolks (7 PCs) are beaten with sugar (120 gr.), add the flour (3 tbsp), vanilla.
Pour in the milk (250 ml.).
Put on fire and, stirring, cook until thick. Remove from heat and cool.
Beat butter in a magnificent mass and stirring constantly, add a spoonful of the custard and brandy. Because in my family do not drink alcohol, brandy I did not add it.
For cream No. 2: cream vzbit to strong peaks.
Crushed praline mix with whipped cream. Next is the Assembly of the cake. At first Korzh apply cream.
Top the cream with pralines.
